My Favorite Recipe





Today I wanted to share one of my absolute favorite recipes in the entire world, and no, that is not an over exaggeration! My Mum used to make this dish when we lived in England, and now it has become the meal I make every Christmas for Ry and I. It makes me feel all warm, homey and comfy cozy.

Ingredients


5lbs russet potatoes
Olive oil
Salt
Pepper
Savoy cabbage
Blue cheese
Marble cheddar and mozzarella
Smoked Gouda
Feta

First things first, wash and slice up your potatoes into 1/4 of an inch slices. If the skins are good on the potatoes you can leave them on. Put the potato slices into a big bowl (or two bowls if you don't have one that's big enough ), drizzle with olive oil (just enough to gently coat the potato slices), sprinkle with salt and cracked black pepper to taste, and put aside.

Slice entire medium sized savoy cabbage. Fill a large pot with 1/2 an inch of water, put on a medium heat, add the savoy cabbage, and place the pot lid on top. This will let the savoy cabbage steam and soften. I like to leave the savoy cabbage in the pot long enough till all the water evaporates and the edges of the sliced cabbage blacken a little. Stir every now and again. Once cooked, put aside.

Prepare the cheeses by grating the Gouda and marbled cheddar and mozzarella, and crumble the feta and blue cheese.

Preheat oven to 375 degrees F.

Grab one or maybe two large glass casserole dishes and start layering your ingredients beginning with potatoes, then cabbage, then the cheeses. Repeat this until all ingredients are used up. I always try to end with cheese on top this way it gets nice and bubbly.

Put the dishes into the oven for roughly an hour to an hour and a half. I usually check it every half an hour by taking a sharp knife and seeing if it will easily poke through the potatoes - if it does your dish is ready! Cooking times may vary depending on the type of oven you are using. This is what your dish should look like when it's all cooked.

This dish is my absolute favorite, and I get excited to cook and especially to eat it every year!
